Beetroot and radish salad with walnut pesto

Background
You can make this beetroot and radish salad with walnut pesto under 10 minutes! It’s very healthy - gluten and dairy-free too, although you can add some Parmesan to the dressing (or vegan Parmesan) if you like. It’s perfect for parties, picnic or lunchbox, and for those who are on a diet.
Ingredients
- 3 medium cooked beetroot (not pickled)
- 8 radishes ( medium-large)
- 1 celery stick
- For the dressing:
- 2 handful (1 pack) of basil leaves
- 2 Tbsp chopped walnuts
- 2 Tbsp extra virgin olive oil
- 1 garlic clove
- Juice of ½ lemon
- Salt &pepper
- To serve: chopped basil leaves and walnuts
