Lemon and mustard kangaroo medallions
Background
If you don’t like game why don’t you try Kangaroo meat which tastes a bit less gamey and it’s more healthy than red meat? You can now buy kangaroo steak in most supermarkets, which is very easy to cook (but make sure you don’t overcook as it becomes dry and chewy!) These lemon and mustard kangaroo medallions are perfect for parties and barbies.
Ingredients
- 6 Kangaroo medallions ( or 2 steaks)
- Juice of ½ lemon
- 2 Tbsp Dijon mustard
- 2 tsp olive oil
- 1 garlic clove, minced
- 1 tsp dried oregano or thyme
Instructions
- If the kangaroo steak is too big, cut it in half or even quarter.
- Mix the mustard, lemon juice, garlic, oil and herb together. Add the medallions, making sure they are well covered. Marinate for at least a couple of hours.
- Heat a griddle pan (or BBQ) and cook on each side until the surface is lightly charred and the meat is cooked to your liking.
- Let it rest for a few minutes before serving.
