Orange, honey and cinnamon baked sweet potatoes
Background
For a festive side dish I highly recommend these orange, honey and cinnamon baked sweet potatoes. It’s a very simple recipe yet it goes superbly with roast chicken, turkey, goose and gammon - also you can use it for warm, hearty salads during the winter months. I used orange blossom honey, but other kinds of honey would work too (in which case add some grated zest to the glaze).
Ingredients
- 2 big sweet potatoes, peeled and cut into 1-inch cubes
- 2 Tbsp olive oil
- 2 Tbsp honey (orange blossom)
- 1 tsp ground cinnamon
- Juice (and zest) of ½ orange
- Salt and freshly ground black pepper
Instructions
- Preheat oven to 180°C.
- Cut the sweet potatoes into 3 cm chunks (no need to peel them if they are organic). Scatter them in a roasting tray.
- Mix the oil, honey, cinnamon and orange juice. Brush the sweet potatoes with this glaze, then season with salt and pepper.
- Roast for 25 to 30 minutes in oven or until tender.
- Serve warm as a side dish or mix it with a salad.
