Smoked salmon and lemon pasta
Background
When I have little time to cook or just feel like a quick & easy meal, I normally make a pasta dish with smoked fish or leftover meat/vegetables. This smoked salmon and lemon pasta hardly needs any cooking β itβs ready within 10 minutes. I used gluten-free spaghetti, but it works with any type of pasta. Serve it with a crispy salad et voilΓ youβll have a filling a tasty meal!
Ingredients
- 200g spaghetti
- 100g Ricotta or Philadelphia
- 50 ml crΓ¨me fraîche/Greek yoghurt
- Β½ lemon, zested and juiced
- 1 Tbsp chopped chives
- 100g smoked salmon, cut into strips
Instructions
- Bring a pan of lightly salted water to the boil and cook the pasta according to the pack instructions.
- Meanwhile cut the salmon into thin strips. Mix the crΓ¨me fraîche or yoghurt with the lemon zest and cream cheese.
- When the pasta is cooked, drain and return to the pan. Add the cheese mixture, lemon juice, chives and smoked salmon. Mix well until combined. Season with salt and pepper to your liking.
- Serve immediately.
