Strawberry & chocolate cupcakes

Background
These strawberry & chocolate cupcakes are lovely for special occasions - Β anniversaries, Valentines Day, Mothers Day, afternoon tea parties and so on. The batter is very easy to throw together and the cupcakesΒ are soft, tasty and pretty.
Ingredients
- 2 cups self-raising flour
- 1 cup sugar
- ½ cup desiccated coconut (optional)
- 3 Tbsp cocoa powder or half cup of chocolate pieces
- 1 cup strawberry yogurt
- 1 large egg
- 3 Tbsp butter or margarine, melted
- Icing:
- Freeze dried strawberries
- Cream cheese or fondant icing or melted white chocolate
Instructions
- Preheat the oven to 190Β°C
- Mix the flour with the sugar.
- In another bowl mix the cooled butter, yoghurt and egg.
- Combine the two mixtures, then stir in the chocolate or cocoa powder, coconut and strawberry pieces.
- Spoon the batter into silicone muffin cases or a lined muffin tin. Bake for 20-25 minutes. Cool on a wire rack.
- Make some fondant icing following the instruction on the packet and spread this on top of the cupcakes (or spread cream cheese on them). Scatter dried strawberry pieces on top. Let the icing set before serving.
