Background
This tomato, cucumber and avocado salad is super easy to throw together and can be eaten as a main (with pitta, tortilla, scones); as side dish with barbecued/grilled meat or as a filling in burgers, wraps and sandwiches. It's very healthy too so it's perfect for dieters and the health-conscious!
Ingredients
- 150g ripe tomatoes
- Β½ cucumber
- Β½ red onion
- 1 avocado
- 1 handful of coriander
- 1 Tbsp extra virgin olive oil
- Juice of Β½ lemon
- Salt & pepper
Instructions
- Dice the tomatoes. Deseed the cucumber and dice. Finely slice the onion. Chop the coriander.
- Cut the avocado in half, remove the skin and the pit then dice the flesh.
- Put all in a serving dish. Season with salt and pepper, then scatter the chopped coriander on top.
- Drizzle with the oil and lemon juice. Toss and serve.
