Ingredients: 2 Cups Basmati rice; 1 cup Vegetables (Carrots, peas, corn, beans, potato,etc) chopped; 1 cup Coconut milk; 2½ cups Water; A sprig of mint leaves (washed and chopped); 1" Ginger (Grated); 4 Cloves garlic (Grated); 1 Green chilli; 2 Onions (Sliced); 1 Tbsp Oil; Salt as required; 3 cloves; 2 Cardamoms; 1" Cinnamon

Background

Vegetable pilaf is rice cooked with vegetables and spices. This recipe uses coconut milk to cook the rice and vegetables which give a different taste to the vegetable pilaf. It goes extremely well with gravies especially chicken gravy.

Ingredients

2 Cups Basmati rice
1 cup Vegetables (Carrots, peas, corn, beans, potato,etc) chopped
1 cup Coconut milk
2½ cups Water
A sprig of mint leaves (washed and chopped)
1" Ginger (Grated)
4 Cloves garlic (Grated)
1 Green chilli
2 Onions (Sliced)
1 Tbsp Oil
Salt as required
3 cloves
2 Cardamoms
1" Cinnamon

Instructions

Heat oil in a pan and cloves, cardamom and cinnamon.
Add the onions and green chilli and fry until brown.
Add mint leaves and fry for a minute.
Add ginger and garlic and fry for half a minute.
Add the vegetables and mix.
Add the rice, coconut milk, salt and water and mix.
Pressure cook the rice with vegetables according to your cooker specifications. Or cook on very low flame under lid until all the vegetables and rice are cooked.
Serve hot.
