White Kidney Beans Curry

Background
White kidney beans are very healthy and very tasty once cooked with the right amount of spices. This curry is a family favourite and goes very well with rice or roti.
Ingredients
- 1 cup White kidney beans (Pressure cooked with 2 and ½ cups of water)
- 1 Onion big (Chopped)
- 1 Green chilli
- 3 Tomatoes chopped
- 1 Tbsp Ginger garlic paste
- 2 tsp Coriander powder
- 1 tsp Cumin powder
- ½ tsp Chilli powder
- Salt as required
- 2 Cardamoms
- 2 Cloves
- 1" Cinnamon stick
- 1 Tbsp Oil
- ½ tsp Turmeric
Instructions
- Pressure cook the white kidney beans until they are soft.
- Meanwhile, heat oil in a deep bottomed vessel and add cinnamon, cardamom and cloves.
- Add the onion and fry them until brown.
- Add the green chilli, ginger garlic paste and turmeric to it and fry for a minute.
- Add the tomatoes, coriander powder and cumin powder and cook until the tomatoes are soft.
- Add the pressure cooked white kidney beans and salt to this and cook for 5 minutes.
- Serve hot with rice or roti.
