Easy avocado cream

One of my favourite dips is Guacamole but when I don’t have any fresh chillies or tomatoes I make this Easy Avocado Cream instead. This version is not too spicy, but if you’re worried about it (for the kids perhaps) just add the Tabasco gradually to taste or make the dip without it then divide into two dishes and add the Tabasco to one of them. Serve the cream with tortilla chips or crudités.

Ingredients
  

  • 2 ripe avocados
  • 1 lime juiced
  • 1 tsp Tabasco sauce
  • 2 spring onions
  • 1 garlic clove minced
  • 1 handful of coriander leaves
  • Salt & pepper

Method
 

  1. Cut the avocados in half (lengthwise), then remove the stone and spoon out the flesh.
  2. Chop the spring onions (including the green parts).
  3. Put the avocado and spring onion into a small food processor, then add the lime juice, Tabasco, garlic and coriander leaves. Blend until you have your desired texture – it can be smooth or coarse. Season with salt and pepper to your liking.
  4. Taste and add more lime juice or Tabasco if needed.
  5. Transfer the cream into a serving bowl, cover with cling film and chill until serving.
