Air fryer egg and prosciutto loaf

This air fryer egg and prosciutto loaf is gluten-free, low-carb and flourless, so perfect for those are on a keto or low-carb diet. It’s dairy-free too, but feel free to add some mozzarella or grated goat’s cheese to the egg mixture Sometimes I make this recipe with Iberico ham and add a spoonful of grated Manchego cheese and a pinch of paprika which give it some Spanish flavours. You can serve it warm or cold - so it’s ideal for a weekend brunch or picnics and summer trips.

Ingredients
  

  • 4 large eggs
  • ½ grilled or roasted red pepper skinned
  • 3 spring onions
  • 5 slice of prosciutto or Parma ham or Jamon Iberico
  • Salt& pepper
  • 1 Tbsp chopped parsley or basil leaves
  • Optional: 2 Tbsp grated cheese or 4 mini mozzarella bowls

Method
 

  1. Cut the spring onion and red pepper into tiny pieces. Finely chop the herbs of your choice.
  2. In a small bowl, whisk the eggs. Add the chopped onion, herbs and grilled red pepper. Season to your liking.
  3. Line a small silicon loaf case or tin with 3 or 4 slices of the ham.
  4. Chop the remaining ham and add to the egg mixture. Add the cheese too, if used.
  5. Pour the egg mixture into the loaf tin, then put it into the air fryer. Set it to bake for 15 minutes, at 190°C.
  6. Alternatively, bake it in a preheated oven, set to 190°C, for about 20 minutes.
  7. Insert a skewer in the middle - if it comes out clean, it’s ready.
  8. Let it cool in the case for 5 minutes, then turn it out onto a chopping board.
  9. When cooled, cut it into slices or chunks.
