Andhra style mint chutney

In southern India, we have many different varieties of chutney. This is an Andhra style mint chutney - a very popular one which goes really well with rice, idly and dosa.

Ingredients
  

  • 3 cup mint leaves
  • 3 Tbsp husked black gram
  • 3 red chilli
  • ½ tsp tamarind pulp
  • 1 tsp mustard seeds
  • A pinch turmeric
  • 3 tsp oil
  • Salt to taste

Method
 

  1. Over medium flame in a pan, heat 2 tsp oil.
  2. Add the black gram and stir-fry till it is golden. Turn off the heat.
  3. Add the split red chillies and stir-fry for a few seconds.
  4. When it cools down a bit (but is still warm), add the mint leaves and mix well.
  5. With a little water, grind together the fried black gram, mint leaves, chillies, tamarind, turmeric and salt to a coarse paste.
  6. Transfer the mixture into a bowl and set aside.
  7. Heat 1 tsp oil.
  8. Add the mustard seeds and wait till they splutter.
  9. Add the mustard seeds to the mint chutney.
  10. Serve with warm rice and ghee.
