Apple and blackberry oat bars

These apple and blackberry oat bars are vegan, sugar-free, low-fat and gluten-free if appropriate oats are used. Serve them with you breakfast coffee or afternoon tea -  they are ideal snacks throughout the day too or take them with you in your lunch box and for picnics, trips as a treat.

Ingredients
  

  • 2 cups oat
  • 2 bananas
  • 2 Tbsp vegetable oil
  • 1 apple grated
  • 1 tsp cinnamon powder
  • ½ cup chopped nuts
  • 1 handful blackberries chopped

Method
 

  1. Heat the oven to 180°C. Line a small (22x22cm) baking tin with parchment paper.
  2. In a mixing bowl, mash the bananas with a fork. Add the cinnamon, grated apple, oats, nuts and the oil. Mix until you get a thick mixture but not a dough. Add the chopped blackberries.
  3. Transfer the mixture to the tin, spreading it out evenly, then bake for 25 minutes.
  4. Leave it to cool in the tin for 5 minutes, then transfer it to a wire rack and let it cool completely.
  5. Cut it into bars or squares.
  6. Store the slices in a cake tin.
