Ingredients

  • 4 green cooking apples
  • 150 g blueberries
  • 4 Tbsp apple juice
  • 4 Tbsp unrefined muscovado sugar
  • 2 tsp cinnamon
  • ½ cup rolled oats gluten-free,if needed
  • 1 cup flour gluten-free, if needed
  • ½ cup chopped walnuts
  • 75 g dairy-free soft margarine approx.

Method

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop them into thin wedges. Line an oven-proof dish with the apple pieces, pour over the apple juice, then scatter the blueberries and walnuts on top.
  3. Dust with 2 Tbsp of sugar and half of the cinnamon.
  4. In a bowl, rub the margarine with the flour and cinnamon until you get lumpy breadcrumb-like mixture. Add the remaining sugar and oats, then mix well. Add more margarine if you think it’s too dry.
  5. Cover the apple & blueberry layers with the crumble, slightly pressing it down with the base of a spoon.
  6. Bake for about 20 minutes until golden.
  7. Serve warm.
