Put the waffle ingredients in a blender and whiz until you get a smooth batter. Set aside to rest.
Make the apple sauce. Peel the apple, remove the core and chop it into 1cm cubes.
Put the apple cubes in a small, non-stick saucepan, add the apple juice, maple syrup, sugar, butter and cinnamon. Cook for about 10-15 minutes, until the apple lightly caramelises.
When the apple cubes are sticky and tender (but not mushy!), turn off the heat.
Heat the waffle maker. Once it’s hot, spoon in some batter and sea, following the machine instructions. Make about 4 waffles (depending on your waffle maker) one by one. Keep them warm.
Serve the waffles with the caramelised apple sauce, dusted with some cinnamon.
Serve the warm waffles with the raspberry yogurt drizzled on top.
