Apple and pear muffins

Apple and pear is a classic fruit combo during the autumn and winter months so no wonder these apple and pear muffins work well too - they are lovely and sweet yet don't have much sugar. Kids just love them!

Ingredients
  

  • 200 ml milk or dairy-free milk
  • 2 medium eggs
  • 100 ml vegetable oil
  • 100 g light brown sugar
  • 300 g self-raising flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 2 apples
  • 2 pears
  • Maple syrup optional

Method
 

  1. Preheat the oven to 200°C. Line a muffin tin with paper muffin cases.
  2. Sift the flour, cinnamon and ginger together.
  3. In another bowl mix the eggs, milk, oil and sugar.
  4. Peel and core the fruits, then dice the flesh into small pieces.
  5. Add the fruits to the flour, gently stir through, then add the egg mixture. Strir well.
  6. Fill the muffin cases two thirds full with the batter and bake in the oven for about 25 minutes until golden brown.
  7. Move them onto a wire rack.
  8. When the muffins are still warm, prick them on the top several times with a skewer, and spoon over some maple syrup.
  9. Allow them to cool.
