Preheat the oven to 200°C. Line a muffin tin with paper cases.
Sift the flour, cinnamon, ginger together in a mixing bowl.
In another bowl mix the eggs with the milk, oil and sugar.
Peel & core the fruits, then coarsely chop them into small pieces.
Add the fruits to the flour mixture, gently stir with a wooden spoon. Pour in the egg-mixture. Mix until just combined.
Fill the muffin cases with the batter and bake in the oven for about 25 minutes until golden brown.
Move them to a wire. While they're still warm, prick their top with a skewer and spoon some maple syrup over them, if you like. Let them cool.
