Apple pie mummies

These apple pie mummies are perfect for a Halloween party or dinner. They can be made ahead or freshly and served with a warm caramel sauce, melted chocolate, fruit compote or custard. It can be vegan and gluten-free too.

Ingredients
  

  • 6 Granny Smith apples
  • 1 Tbsp. warm water
  • 2 tsp cornflour
  • 2 Tbsp butter or margarine
  • ½ lemon juiced
  • 1 tsp cinnamon
  • 2 Tbsp muscovado sugar
  • 1 sheet ready-rolled puff pastry dairy or gluten-free if needed
  • 1 Tbsp milk or plant-based milk
  • Raisons cranberries, small marshmallows etc

Method
 

  1. Peel and dice 2 apples.
  2. Cut off the tops of the remaining apples, then scoop out the flesh, using a melon baller, leaving about 5mm rim.
  3. In a small bowl, mix the water and cornflour into a paste.
  4. Melt the butter in a small saucepan over medium heat, then add the diced apples, lemon juice, cinnamon and sugar. Cook for about 5 minutes until the apples are tender (not mushy). Add the paste and cook for another minutes or so. Let it cool.
  5. Preheat oven to 190°C.
  6. Put the hollowed out apples onto a baking tray, lined with parchment paper. Fill them with the apple sauce mixture.
  7. Roll out the puff pastry, the using a pizza cutter, cut out long strips. Wrap the filled apples with these looking like a mummy- not too tightly though.
  8. Brush the pastry crust with the milk, then bake for about 20-25 minutes or until the apples are tender and the crust is light brown.
  9. Stick the eyes into the gaps (using dried cranberries, sultanas, marshmallows, sweets etc.)
  10. Serve with a sauce of your choice.
