Firstly we have to peel off the reddish leaves like outer part from Banana flower. Discard the leaves.
You will find the flowerets attached, pluck each one and set aside.
In each floweret, remove the pistil as a whole. This can be identified by checking for stalk with a sticky bob attached. Throw this stalk away.
Apart from the pistil, we have to discard translucent outer most part of the floweret.
Repeat the same for all the flowerets. Wash the flowerets with water.
Add them to buttermilk and soak for 5 minutes. Squeeze the buttermilk off flowerets and make sure to remove all the liquid from them.
Add the flowerets to a food processor to finely chop them.
In a pan, add oil, mustard seeds and fry until them sputter. Add red chillies, crushed garlic, turmeric and curry leaves.
Now add the lentils, green chillies and 1 cup water. Cook until the the lentils are half done.
Add the flowerets to the lentils , add half cup of water and cover the pan with a lid. Cook until the lentils and flowerets are completely cooked and the water has evporated.
Add salt as required and mix well.
Finally add the grated coconut and mix well. Cook for 2-3 minutes.
Serve hot with rice and ghee.
