Cut the fillet into 1 cm thick medallions.
Mix the soya sauce, ginger, garlic, honey and sesame oil then pour over the medallions.
Marinate for a couple of hours or overnight.
Preheat the oven to 180°C.
Put the medallions in a baking dish, pour over the marinade, then season with black pepper and scatter the spring onion on top.
Bake for 20- 25 minutes.
Serve with chopped fresh herbs scattered on top and lime wedges on the side.
Alternatively, griddle, grill or barbecue them for 3-5 minutes on each side, until charred and serve with the chopped spring onion and coriander leaves.
