Avocado and crayfish cocktail

This avocado and crayfish cocktail is a delicate version of the famous prawn cocktail. It’s a perfect starter in a special menu - ideal for Christmas, Easter, Valentine’s day, Anniversaries and other special celebrations. It takes only a few minutes to prepare.

Ingredients
  

  • 1 ripe avocado
  • 3 romaine leaves or 1 little gem
  • 3 spring onions
  • 100 g crayfish trail
  • ¼ cucumber
  • For the sauce:
  • 2 Tbsp mayo
  • 1 Tbsp crème fraîche
  • 2 tsp ketchup
  • Dash of Tabasco
  • Juice ½ lemon

Method
 

  1. Cut the cucumber in half and scoop out the seeds and discard. Dice the cucumber. Cut the lettuce into very thin strips. Thinly slice the spring onion. Peel and dice the avocado flesh and squeeze some lemon juice over to stop getting brown. Put everything into a mixing bowl.
  2. Mix the sauce together, adjust the spiciness and sweetness. Pour this over the salad and gently toss. Season with salt and pepper.
  3. Keep refrigerated until serving.
  4. Spoon the mixture into small glass dessert dishes or tumblers. Scatter some freshly ground pepper on the top and perhaps a pinch of cayenne. Serve with a slice of lemon.
