Bagel with fried egg and sausage

This bagel with fried egg and sausage is perfect for a laid-back weekend breakfast or brunch. I used spicy chorizo, but other, Italian-style paprika sausages are good too for the recipe. If dairy is not an issue for you, then add some grated cheese on top. The bagel can be gluten-free too.

  • 2 bagels
  • 6 cm piece cooking chorizo or similar paprika sausage
  • 2 eggs
  • 1 handful ripe baby tomatoes
  • Balsamic glaze
  • Red pesto

  1. Cut the sausage into thin rings. Halve the tomatoes.
  2. Heat small spoonful of oil in a large frying pan and fry the sausage and tomatoes over low heat.
  3. Transfer them to a plate and keep warm under cover.
  4. Break the eggs into the pan and cook for 2-5 minutes according to your liking.
  5. Meanwhile, cut the bagels in half and lightly toast them in a toaster.
  6. Spread some pesto over the lower halves, then divide the tomato and sausage mixture between them.
  7. Put one egg on top of each bagel base, then garnish with balsamic glaze and serve with salad on the side.
