Balsamic celeriac slaw

This balsamic celeriac slaw is dairy-free and may-free, so it’s ideal for those who are on a diet. It’s very is easy to put together - perfect for parties, BBQ's, picnics and lunch-boxes. It's also ideal as a sandwich, burger or flatbread filler, served with grilled meat or fish.

Ingredients
  

  • ½ celeriac
  • 1 medium carrot
  • 1 small onion
  • ½ white cabbage
  • 2 Tbsp balsamic vinegar
  • ½ Tbsp olive oil
  • ½ Tbsp. walnut oil
  • 1 tsp honey
  • Salt and pepper
  • 2 Tbsp lightly toasted nuts walnut or almond flakes
  • Basil leaves

Method
 

  1. Peel and thinly slice or shred the celeriac, carrot and onion. Put them in a bowl. Season with salt and pepper, then add the vinegar, oil and honey. Toss well.
  2. Taste, and adjust the sweetness and/or sharpness.
  3. Lightly toast the nuts, then add to the slaw.
  4. Let the salad rest for at least 30 minutes, 2 hours of possible.
  5. Serve with some fresh basil leaves scattered on top.
