Balsamic salmon with spinach and shiitake

This balsamic salmon with spinach and shiitake is a super easy and healthy dish. You can serve it with mashed potatoes/sweet potatoes or steamed quinoa/buckwheat/rice. Make sure you don’t overcook the fish!

Ingredients
  

  • 2 wild salmon fillets
  • 2 cloves of garlic
  • 100 g shiitake
  • 2 Tbsp balsamic vinegar
  • 50 ml white wine or Prosecco
  • 100 g baby spinach
  • 2 Tbsp olives
  • Chilli flakes
  • Salt and pepper

Method
 

  1. Thinly slice the garlic.
  2. Heat the oil in a frying pan and sauté the garlic and a pinch of chilli flakes for 20 seconds.
  3. Add the shiitake and balsamic vinegar. Stir for a minute to lightly caramelize, then add the wine. Gently sauté, under cover, for 5 minutes. Add the spinach and continue to sauté for 3 minutes until the spinach has just wilted.
  4. Put the salmon fillets on top. Season with salt and pepper.
  5. Drizzle with oil and scatter a pinch or two chilli flakes on top.
  6. Put the lid on and steam for about 5-8 minutes, depending on the thickness of the salmon.
  7. Serve with a squeeze of lemon juice.
