Balsamic tomato and cucumber salad

This balsamic tomato and cucumber salad works well for parties, dinner parties, picnics or laid-back midweek suppers. Ideally you should use top quality balsamic vinegar and sweet, ripe tomatoes - but if you don’t have them to hand, then just add a little honey to the dressing!

Ingredients
  

  • ½ cucumber
  • 1 cup cherry tomatoes
  • ½ red onion
  • 1 handful basil leaves
  • For the dressing:
  • 2 Tbsp olive oil
  • 1.5 Tbsp balsamic vinegar
  • Honey to taste if needed
  • Salt & pepper

Method
 

  1. Cut the tomatoes in half and put them in a serving bowl.
  2. Cut the cucumber in half lengthwise then scoop out the soft bits. Cut the cucumber into small chunks and add these to the tomatoes.
  3. Finely chop the onion and add to the salad.
  4. Whisk the dressing together and season with salt and pepper. Taste it and add some honey if it’s not sweet enough.
  5. Scatter the basil leaves on top before tossing it with the dressing.
