Banana and chestnut oat cookies

These banana and chestnut oat cookies are moist and yummy. They are vegan and healthy as they don’t have any sugar, oil, dairy or gluten. They are perfect for breakfast, afternoon tea or snacking during the day. You can make these cookies in an air fryer, using the “bake” setting which takes about 10 minutes.

Ingredients
  

  • 2 ripe bananas
  • 1 apple grated
  • 1.5 cup oats gluten-free if needed
  • 75 g roasted & peeled or vacuum packed whole chestnuts
  • 1 tsp mixed spice

Method
 

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add the oats, grated apple and mixed spice, then mix well.
  3. Chop the chestnuts into tiny pieces, then fold into the mixture.
  4. Let the mixture rest for a few minutes.
  5. Meanwhile, preheat the oven to 180°C and line a baking tray with parchment paper.
  6. Using your hands, make patties from the mixture, then place them on the prepared baking tray.
  7. Bake in the oven for approx. 20 minutes until golden.
  8. Let them cool on a wire-rack and serve.
