Put the ribs in a deep saucepan. Pour over the cider and enough water to cover them properly. Add the bay leaf, star anise and cinnamon stick. Bring to the boil and gently simmer for 20 minutes.
Drain then set the ribs aside (or chill in the fridge until you’re ready to barbecue/grill them)
Mix the glaze ingredients until well combined.
Season the ribs, then using a silicon brush, coat each well and put them on a plate.
Turn your BBQ/grill/griddle pan on and cook for about 10-15 minutes, until golden, sticky and slightly charred.
Serve warm or at room temperature.
