Beet guacamole

This beet guacamole is an ideal condiment during the winter months. It’s extremely healthy, tasty and easy to make. You can use homemade roasted beetroots or shop-bought cooked beets. Serve it wrapped in tortilla or as a dip with pita.

Ingredients
  

  • 3 roasted or cooked beetroots
  • 1 ripe tomato or 3 cherry tomatoes
  • ½ red onion
  • 2 tsp olive oil
  • 2 ripe avocados
  • 1 clove of garlic minced
  • Juice of 1 lime
  • salt & pepper to taste
  • 2 Tbsp chopped coriander
  • ½ tsp dried chilli flakes or 1 fresh chilli deseeded & chopped

Method
 

  1. Finely chop the beet, tomato and onion. Put these in a bowl, season to taste and toss with the oil.
  2. Cut the avocado in half, remove the stone and scoop out the flesh into a bowl. Using a fork, mash the avocado flesh with the garlic and the lime juice. Season to taste.
  3. Gently toss the mashed avocado with the beet & tomato salsa, the chilli or chilli flakes and the chopped coriander.
  4. Taste and adjust seasoning.
