Blackberry Chocolate Oat Bars

These blackberry chocolate oat bars are a simple, wholesome bake made with everyday ingredients. Naturally vegan, dairy-free, and free from added sugar, they’re a great option when you want something sweet but still balanced. The bananas and apple bring natural sweetness and softness, while the blackberries add little bursts of flavour and the chocolate chips make them feel a bit more indulgent. They’re perfect for breakfast, snacking, or taking along to picnics, and you can easily make them with gluten-free oats if needed. They also work well baked in an air fryer using a small silicone mould.

Ingredients
  

  • 2 ripe bananas
  • About 12 blackberries
  • 1 tsp vanilla extract
  • 1 tsp milled chia seeds
  • cups rolled oats gluten-free if needed
  • 1 apple grated
  • ½ cup chocolate chips dairy-free if needed

Method
 

  1. Preheat the oven to 180°C and line a baking tin with parchment paper.
  2. In a bowl, mash the bananas and blackberries with a fork until mostly smooth.
  3. Add the grated apple, chia seeds and vanilla extract, and mix well.
  4. Stir in the oats until fully combined. The mixture should be soft but not runny - add a little more oats if needed.
  5. Fold in the chocolate chips.
  6. Let the mixture rest for a few minutes so the oats can absorb some moisture.
  7. Transfer to the prepared tin and spread evenly.
  8. Bake for about 15-20 minutes (in the oven or air fryer), until lightly golden and set.
  9. Allow to cool on a wire rack before cutting into bars or squares.
