Blue cheese and salmon pate

Blue cheese and salmon is an interesting combination. This paté is quick and easy to prepare, making it an ideal spread for party snack parties (especially as an accompaniment with white wine or fizzy). It's also perfect to make delicious sandwiches for picnics or your packed lunch for work.

Ingredients
  

  • 1 small can salmon about 200g
  • ¼ cup of blue cheese such as stilton
  • 2 Tbsp chopped parsley
  • 1 Tbsp grated onion
  • 50 g cream cheese
  • ½ garlic minced
  • salt & pepper
  • 1 Tbsp freshly squeezed lemon juice
  • 1 tsp Worcestershire sauce
  • 1 slice of Anchovy or ½ tsp anchovy paste

Method
 

  1. Drain the salmon and remove any skin.
  2. Put it into a small food processor, add the remaining ingredients and blend into a coarse paste. Alternatively use a pestle & mortar or just a fork.
  3. Let the paté rest in the refrigerator for at least 30 minutes for the flavours to infuse.
