Blueberry muffins

Blueberries are my favourite of all the berries. These blueberry muffins are loved by my daughter so I make them quite often for her. They are very simple and easy to make - and delicious too!

Ingredients
  

  • 50 g Butter
  • 250 g Self raising flour
  • 1 tsp Baking powder
  • 75 g Caster sugar
  • A pinch of salt
  • 250 g Plain yogurt
  • 2 Large eggs Lightly beaten
  • 250 g Blueberries

Method
 

  1. Pre heat oven to 200°C. Line the tin with paper cases and set aside.
  2. Sift the flour into a large bowl. Add the baking powder, sugar and a pinch of salt. Make a well in the centre.
  3. Melt the butter in a small pan and set aside to cool.
  4. In a separate bowl, mix the yogurt, eggs and the cooled butter.
  5. Pour this into the dry ingredients along with the blueberries.
  6. Mix all the ingredients until just combined. It should not be over- mixed.
  7. Spoon the batter evenly into the cases. Bake them for 20 minutes or until risen and golden.
  8. Cool in the tin for 5 minutes. Serve warm or cool.
