Lightly toast the coriander seeds then crush them in a mortar.
Mix the ingredients in a large bowl, season with salt and plenty of ground pepper to your taste.
Form 4 equal sized balls formed from the mixture, then using your palms flatten them into 1.5-2cm thick patties. Cover them and rest them in the fridge until you’re ready to grill.
Take the patties out of the fridge. Turn on the grill or BBQ. Prepare the condiments and cut the buns in half.
When the grill/BBQ is ready, cook the patties on both sides for 3-5 minutes. When they are almost done, put some cheese slices on top and let these melt a bit.
Place the patties on a plate, cover with a large bowl and rest for 5 minutes. Meanwhile, lightly toast the open side of the buns on the grill.
Assemble the burgers with your chosen condiments and fillings, then serve.
