Boerewors burger

Boereworsis a very popular South African sausage, which is made from beef, pork and spices. This Boerewors burger recipe is actually based on the same ingredients – then just made into patties instead of sausages. The burgers are ideal for summer barbecues and parties.

Ingredients
  

  • ½ Tbsp coriander seeds
  • 250 g minced beef
  • 250 g minced pork
  • 1-2 pinch of ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice optional
  • 1 Tbsp bread crumbs or polenta
  • Salt & pepper
  • To serve: gherkin & tomato slices crispy lettuce ( such as iceberg ), Emmental or Gruyere cheese (optional), ketchup, mustard, mayonnaise, buns

Method
 

  1. Lightly toast the coriander seeds then crush them in a mortar.
  2. Mix the ingredients in a large bowl, season with salt and plenty of ground pepper to your taste.
  3. Form 4 equal sized balls formed from the mixture, then using your palms flatten them into 1.5-2cm thick patties. Cover them and rest them in the fridge until you’re ready to grill.
  4. Take the patties out of the fridge. Turn on the grill or BBQ. Prepare the condiments and cut the buns in half.
  5. When the grill/BBQ is ready, cook the patties on both sides for 3-5 minutes. When they are almost done, put some cheese slices on top and let these melt a bit.
  6. Place the patties on a plate, cover with a large bowl and rest for 5 minutes. Meanwhile, lightly toast the open side of the buns on the grill.
  7. Assemble the burgers with your chosen condiments and fillings, then serve.
