Boozy ricotta tiramisu

This boozy ricotta tiramisu is made without coffee (and eggs), but has more alcohol than usual. You can use whatever you feel like -  for example Amaretto, Brandy, Cognac, Marsala, Sherry etc. It’s an easy dessert that is ideal for the winter festivities.

Ingredients
  

  • 100 ml double cream
  • 150 g ricotta
  • 1 tsp vanilla extract
  • 4 Tbsp Amaretto
  • 1 Tbsp Stevia or 2 Tbsp maple syrup
  • About 10 Lady fingers Savoiardi
  • Good quality dark chocolate

Method
 

  1. Whisk the cream, ricotta, vanilla, Stevia until you get a thick, smooth cream.
  2. Pour the Brandy or other alcohol in a shallow dish. Dip in the lady fingers, each at a time, for a couple of seconds, then turn them over to soak on the other side. Make sure they are not soggy. Put them tightly next to each other in a deep serving dish, then spread half of the cream mixture on top.
  3. Grate enough chocolate over the top to cover the cream completely.
  4. Repeat the layering once more, then cover the dish and put it in the fridge.
  5. Chill for a couple of hours before serving.
