Braised red cabbage with apple is a classic side dish to serve with roast pork and roast turkey. This dairy-free version is braised in cider, so it's perfect for special occasions and celebrations.

Ingredients
  

  • ½ medium red cabbage
  • 1 Tbsp olive oil
  • 1 medium red onion
  • 1 cinnamon stick
  • ¼ tsp freshly grated nutmeg
  • 1 bay leaf
  • 100-150 ml cider
  • 1 Tbsp cider vinegar
  • 2 Tbsp cane sugar soft & light
  • 1 apple
  • Salt & pepper

Method
 

  1. Cut the cabbage in half. Remove the tough outer leaves and cut out the hard core. Finely slice or shred to give long strands.
  2. Heat the oil in a heavy-based saucepan and gently fry the onion until soft and translucent.
  3. Add the cabbage, stir through, then add the cinnamon, nutmeg & bay leaf followed by the cider, vinegar and sugar. Season to taste, stir well.
  4. Bring to a simmer and, under cover, cook for 15-20 minutes, stirring occasionally or until the cabbage is tender but still has a bit of crunchiness.
  5. Core and slice the apple, add to the cabbage; cook for a further 5-10 minutes until the apple is just softened.
  6. Taste, adjust seasoning. Serve warm.
