Braised red cabbage with cherries

Spiced, stewed red cabbage is a must on the Christmas dining table and during the winter festivities. This Braised Red cabbage with cherries goes particularly well with roast turkey and game.  You can use fresh, dried or preserved cherries - if you use preserved ones, add the cherries for the last 5 minutes of cooking. Do use some of the syrup too! For a boozy version you can add a spoonful of  orange or cherry brandy when it’s cooked. Alternatively, in a festive menu, usebrandied cherriesfor garnishing.

Ingredients
  

  • 1 small red cabbage
  • 1 red onion peeled and thinly sliced
  • 2 Tbsp light muscovado sugar
  • 1 Tbsp honey or agave syrup
  • 1 cinnamon stick
  • 1 bay leaf
  • ½ cup dried cherries or 150g fresh pitted cherries or 1 cup sherries in syrup
  • ½ tsp salt
  • ½ cup cider vinegar
  • ½ cup cherry/orange juice or the syrup from the jar/tin
  • Cherries to garnish

Method
 

  1. Thinly slice the onion and finely shred the cabbage.
  2. Put everything in a heavy-based pan, except the cherries, then bring to the boil. Cook for ten minutes over low heat, then add the cherries and simmer for 20-30-minutes, until the cabbage is tender, or longer for a soft texture.
  3. Serve warm, garnished with fresh or preserved cherries.
