Braised red cabbage with pear

If you like red cabbage on your Christmas dining table, you might be interested in this recipe. This braised red cabbage with pear is a bit more special than the normal version, perfect for the festive season. It goes well with roast meat and is  particularly suitable for game. It's easy to make and can be prepared in advance.

Ingredients
  

  • 1 small head red cabbage
  • 1 small red onion
  • 1 cinnamon stick
  • 2 star anise
  • 2 Tbsp cider vinegar
  • 200 ml of pear cider
  • 2-3 Tbsp muscovado sugar
  • 1 large pear
  • 1 Tbsp butter or margarine

Method
 

  1. Thinly slice the onion and fry gently in the butter or margarine until soft together with the cinnamon and star anise.
  2. Meanwhile, thinly slice or shred the cabbage.
  3. Add the vinegar, cider and sugar to the onion and mix thoroughly. When the sugar is melted, add the cabbage slices, toss well. Cook, covered, over a low heat for 30 minutes.
  4. Peel and core the pears, then cut into chunks. Add these to the cabbage. Cook for a further 20-30 minutes until tender.
  5. Season with salt and pepper to taste, add more sugar if not sweet enough. Before serving, remove cinnamon and star anise.
