Put the base ingredients into the breadmaker pan and set to the manufacturer's recommended dough menu.
Split the dough into two halves and place in a greased baking tray. Press down with the heel of your hand to create two 25 cm circles.
Place in the oven set to 40°C and leave for about 20 minutes to "prove" i.e. rise to more or less double their original size.
Remove the tray from the oven which you should now turn up to 220°C.
Spread the topping evenly over the two bases - with a generous sprinkling of grated cheese and/or sliced mozzarella on top of your chosen ingredients.
Bake for about 15 or 20 minutes until the bases are nicely browned and the toppings are sizzling.
Serve immediately, seasoned to taste with freshly ground black pepper and salt.
