Broccoli, Leek and Celery Soup

When you need something nourishing and warming but are also mindful of your calorie intake this Broccoli, Leek and Celery Soup is a great standby. Using a pressure cooker, it's ready in less than 20 minutes and is only about 65 kCals per portion!

Ingredients
  

  • 5 oil spray squirts 5 kCal
  • 3 cloves of Garlic 13 kCal
  • 350 g Leeks 77 kCal
  • 230 g Celery 16 kCal
  • 280 g Broccoli 92 kCal
  • 2 Kallo veg cubes 70 kCal
  • 1 litre Water 0 kCal

Method
 

  1. Clean & roughly chop the vegetables. Peal and slice the garlic. Make up stock with cubes and boiling water.
  2. Squirt the oil into the pan over a medium flame
  3. Gently fry the garlic, then stir in the leek & celery and allow to sweat for a couple of minutes.
  4. Add the broccoli and stock, stirring well, then increase the heat, put on the lid and bring up to pressure.
  5. Pressure cook for 10 minutes, then allow to cool before removing the lid.
  6. Use a hand blender to smooth the soup.
