Bulgur, Green Bean and Lentil Salad

This bulgur, green bean and lentil salad is a simple, wholesome dish that's quick to prepare, especially if you have some leftover cooked bulgur. It's equally good served warm or at room temperature, making it a useful recipe for both busy weekday meals and relaxed summer lunches. The bulgur and lentils make the salad filling and rich in fibre and plant-based protein, while the green beans add freshness and texture. Enjoy it as a light vegan main course or serve it alongside grilled meat, fish or barbecued vegetables. For a vegetarian version, a little crumbled feta works beautifully.

Ingredients
  

  • ½ cup bulgur wheat
  • 1 stock cube
  • 2 shallots thinly sliced
  • 2 garlic cloves thinly sliced
  • ½ tsp dried oregano
  • 100 g green beans trimmed and cut into bite-sized pieces
  • ½ cup vegetable stock
  • 1 x 400g tin lentils drained and rinsed
  • Zest and juice of ½ lemon
  • 2 Tbsp fresh parsley chopped
  • Freshly ground black pepper
  • 1 Tbsp olive oil

Method
 

  1. Rinse the bulgur under cold water.
  2. Place it in a saucepan with enough water to cover it and add the stock cube. Bring to the boil, then reduce the heat and simmer until the liquid has been absorbed. Cover and leave to stand for 5 minutes before fluffing with a fork.
  3. Meanwhile, heat the olive oil in a frying pan over a medium-low heat. Cook the shallots for about 5 minutes until softened.
  4. Add the garlic and oregano and cook for another minute.
  5. Stir in the green beans, lemon juice and vegetable stock. Bring to the boil, then cover and simmer for 5–8 minutes, or until the beans are just tender.
  6. Add the lentils and warm through for 2–3 minutes.
  7. Stir in the cooked bulgur, lemon zest and chopped parsley.
  8. Season generously with freshly ground black pepper, toss everything together and serve warm or at room temperature.
