Carrot and ginger waffles

These carrot and ginger waffles can be sweet or savoury. The sweet ones are perfect for breakfast or brunch, served with maple syrup  -  the savory version would make a good base for party nibbles.

Ingredients
  

  • 2 eggs
  • 1.5 cup flour
  • 1 tsp baking powder
  • 1 cup milk or almond milk
  • 1 tsp grated ginger
  • 1 tsp sunflower oil
  • 1 large carrot grated
  • 1 Tbsp maple syrup optional

Method
 

  1. Put the flour, eggs, baking powder, oil, ginger and the milk in a blender. Pulse for a few seconds and add more milk, if needed, to have a thick, but pourable batter. Fold in the grated carrot. Add the maple syrup for the sweet version, or a pinch of salt for the savoury version.
  2. Heat the waffle maker. Once it’s hot, spoon in the batter and seal. Following the machine instructions, cook the waffles for about 3-5 minutes - they should be golden and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
  3. Serve warm or at room temperature.
