Carrot slaw

This easy carrot slaw makes a perfect filling for sandwiches and wraps, or is an ideal salad for picnics & parties. You can also serve it with grilled fish & meat. It takes only a few minutes to make and keeps well in the fridge for a couple of days.

Ingredients
  

  • 1 large carrot
  • 1 Tbsp olive oil
  • 1 Tbsp freshly squeezed lemon juice
  • 1 Tbsp white wine vinegar
  • ½ tsp Dijon mustard
  • Pinch of chilli flakes
  • 1 Tbsp chopped fresh parsley
  • Salt and freshly ground black pepper

Method
 

  1. Shred the carrot using a food processor with a grating blade or just use a grater. Transfer the carrot to a serving dish.
  2. In a small bowl, whisk together the oil, lemon juice, vinegar, mustard and chilli flakes. Season to taste with salt & pepper.
  3. Toss the shredded carrots with the dressing and the parsley. Taste and adjust the seasoning & chilli.
  4. Chill until served.
