Cheesy frankfurters omelette

On lazy weekends I like to have a nice & easy brunch - and what is easier than making an omelette?  This cheesy frankfurters omelette is ready within ten minutes, it’s filling and delicious  (although not recommended for dieters!). I used Emmental cheese, but matured Cheddar would also work with the smoky flavours of the Frankfurter sausages. Serve it with a green salad and/or some wholesome bread rolls.

Ingredients
  

  • 2 frankfurters
  • 2 spring onions
  • 3 eggs
  • 2 Tbsp grated cheese Cheddar or Emmental
  • 1 Tbsp olive oil
  • ½ green chilli optional
  • Salt and pepper

Method
 

  1. Lightly whisk the eggs in a small bowl. Season with salt and pepper.
  2. Finely chop the spring onions, (chilli, if used) and the frankfurters. Grate the cheese and set aside.
  3. Heat the oil in a small frying pan. Add the spring onion and frankfurters and fry for a minute or so, until the Frankfurter pieces start browning.
  4. Add the eggs mixture, allowing it to spread out around the pieces. Cook for about 5 minutes over medium heat, or until the egg is almost set.
  5. Sprinkle over the cheese and chilli pieces( if used), turn down the heat and the cook for a couple of minutes. Carefully fold the omelette in half with a spatula. Let the cheese melt completely, cut in half and serve.
