Coat the chicken all over with the smoked paprika and seasoning. In a heavy-bottomed pan, heat the oil and brown all sides.
Remove the chicken and add the chorizo to the pan.
Let the oil come out of the sausage, then add the onion and cook gently until it softens.
Add the garlic and ½ of the parsley.
Cook for 10 minutes covered on a low heat.
Stir in the tomatoes and beans. Add the thyme and bayleaf then put back the chicken and bring to a simmer. Cover and leave for half an hour on a minimal heat.
Uncover and reduce the sauce until it's nice and gooey - about 10 minutes.
Serve sprinkled with the remaining parsley.
