Chicken stir-fry with basil

Basil is a relatively new herb in China, so only modern recipes use it and even these tend to use Thai-basil which is smaller and less intense in flavour. This chicken stir-fry with basil is a lovely, easy-to make dish - perfect in a Chinese menu or as a no-fuss meal served with rice.

Ingredients
  

  • 450 g chicken breast boneless
  • 1 ½ Tbsp peanut groundnut oil
  • 2 Tbsp chopped garlic
  • 1 Tbsp chopped ginger
  • 50 ml chicken stock
  • 1 Tbsp soy sauce light
  • 2 Tbsp chilli bean sauce
  • 1 tsp palm or unrefined sugar optional
  • 2 tsp sesame oil
  • 1 handful basil or Thai basil leaves chopped

Method
 

  1. Cut the chicken breasts into 4x1cm strips.
  2. Heat the wok over high heat, then pour in the oil. When the oil starts smoking, add the garlic and ginger. Stir-fry for about 20 seconds until golden. Add the chicken strips, stir-fry for 2 minutes. Pour in the broth, then add the bean sauce (and sugar if used). Cook for 5 minutes.
  3. Finally add the sesame oil and the basil leaves.
  4. Serve hot.
