Dry-fry the pine nuts and set aside.
Chop the spring onions and gently fry them in little oil until softened. Add the garlic, stir for 1 minute. Leave to cool.
Drain the chickpeas, then, in a food processor, blend with the onion mixture, basil leaves, grilled peppers and cheese into a coarse pulp.
Transfer the mixture to a bowl, add the breadcrumbs, pine nuts and season to taste with salt and pepper.
Form six balls, press these slightly between your palms. Rest them on a plate until you're ready to cook them.
Heat a little oil in a frying pan and fry each burger for 4-5 minutes on both sides, until golden brown.
Serve the burgers in toasted pita or traditional bun, with green salad and yoghurt .
