Dry the skin of the duck with paper towels. Score the fat of the duck with a sharp knife. Rub the spice mixture into the skin, fat & flesh, season with salt and pepper.
Heat a heavy-based pan until hot. Place the breast skin-side down in the pan.
Fry for five minutes until the fat cooks out and the skin is golden and crispy. Then turn it over and cook it for 3-5 minutes to your liking. Transfer onto a plate and leave to rest in a warm place or under cover.
Meanwhile, heat the honey and soy sauce in a small pan and reduce it to a thick sauce. Put aside.
Boil the noodles according to the instructions on the pack. Slice the spring onions diagonally.
Drain the noodles, transfer onto a serving plate then toss with one spoonful of the sauce, spring onion, sesame seeds and sesame oil. Squeeze over some lime juice. Taste and adjust seasoning.
Slice the duck diagonally, place these on top of the noodles. Drizzle with the honey&soy sauce.
Serve with the stir-fried vegetables.
