Chinese style roast chicken

In Chinese cuisine it is not normal to roast in an oven, so this Chinese style roast chicken recipe is called "Chinese style" because it uses typical Chinese seasoning. It's ideal for a relaxed family Sunday lunch or when you have friends over for a meal. Serve it with steamed jasmine rice and stir-fried veggies.

Ingredients
  

  • 1 large chicken
  • 4 cloves garlic crushed
  • 2 large onions sliced
  • 30 g ginger thinly sliced
  • 2 star anise
  • 2 Tbsp unrefined brown sugar
  • 4 Tbsp soy sauce
  • 300 ml chicken soup
  • 100 ml rice wine or dry sherry
  • 1 Tbsp sesame oil
  • Coriander leaves
  • Freshly Ground pepper

Method
 

  1. Preheat the oven to 150°C. Oil a deep roasting tin and lay in the onion slices.
  2. Fill the chicken cavity filled with garlic, ginger and anise, then put it on top of the onion slices.
  3. Sprinkle with 1 Tbsp sugar, season with pepper, then drizzle with 2 Tbsp of soy sauce.
  4. Pour over the stock and rice wine, then sprinkle with the remaining sugar and pour over the remaining soy sauce.
  5. Cover the tin with aluminum foil (or a lid) and bake the chicken for 2 hours.
  6. Take the chicken out of the oven and turn up the oven temperature to 180°C.
  7. Baste the chicken with the cooking juices then pour over the sesame oil. Bake for another 30 minutes (without any cover).
  8. When it's cooked through , take it out of the oven and let it rest for 10 minutes.
  9. Carve and serve with the cooking juices, onion slices and some coriander scattered on top.
