Chipotle baked beans

This chipotle baked beans is based on the famousBoston Baked Beans, which was traditionally cooked slowly on Saturdays, overnight for Sunday lunch and served with corn or brown bread.  It used to be just beans sweetened with molasses or maple syrup, later flavored with salt pork or bacon. This recipe is a quicker version - it only needs 30 minutes to make! It's spicy, smoky, warming - perfect dish for the winter party season!

Ingredients
  

  • 1 canned haricot beans
  • 200 g smoked streaky bacon
  • 2 Tbsp maple syrup
  • 2 Tbsp black treacle
  • 1 Tbsp dark muscovado sugar
  • 2 Tbsp chipotle paste
  • 1 tsp English mustard powder
  • 2 cloves

Method
 

  1. Chop up the bacon and fry till crispy. Add the drained beans and pour in 300 ml water.
  2. Mix the mustard powder with the chipotle paste and add to the beans. Stir in the black treacle, sugar and maple syrup.
  3. Add the cloves and pepper. Simmer for 20 minutes under cover.
  4. Remove the lid and cook further until you get a thick, sticky sauce sticking to beans and bacon pieces.
  5. Serve hot with crusty bread or corn scones.
