Chipotle beef skewers

For summer get-togethers, barbecues, informal parties these chipotle beef skewers are perfect. You can marinate them hours ahead   the grilling only takes 10 minutes or so. Serve them tucked into flat bread  and/or with salsa. I used really spicy chipotle paste - if you’re making them with normal ones then swap the quantity of the tomato purée with the chipotle paste.

Ingredients
  

  • 1 tsp Chipotle paste
  • 1 Tbsp tomato purée
  • 1 tsp dried oregano
  • 1 tsp garlic purée
  • Juice of 1 lime
  • 1 red pepper
  • 450 g matured beef steak diced
  • 1 bell pepper
  • 1 courgette optional

Method
 

  1. Mix the pastes, oregano, lime juice in a medium bowl. Add the beef and massage them, until each piece is well covered.
  2. Cover the bowl and rest in the fridge for minimum 30 minutes - overnight if the meat needs to be tenderised.
  3. Soak some wooden skewers in water 30 minutes before cooking.
  4. Take the meat out of the fridge. Heat your BBQ or grill.
  5. Cut the pepper and courgette (if used) into bite-sized chunks.
  6. Thread the beef and veggies onto the skewers, alternating them.
  7. Cook the skewers over medium flame to your liking.
