First, marinate the pork. Mix the ingredients for the pork in a bowl, add the meat and coat each slice well. Set aside - chill if you want to cook them in more than 30 minutes.
Make the bean sauce. Thinly slice the onion, bell pepper and chop the garlic. Roughly chop the tomatoes.
Heat the oil in a large frying pan, then sauté the onion for 5 minutes. Add the bell pepper and garlic, stir-fry for a minute, then stir in the spices, followed by the chipotle pasta and tomato purée. Stir for a minute.
Add the chopped or tinned tomatoes and a drop of water, if needed. Season with salt and peper.
Bring to a boil, turn down the heat and cook for about 15-20 minutes, until get a silky, thick sauce.
Drain the beans and add them to the stew.Warm through, the add the chopped coriander and lime juice. Cover and set aside.
When you're ready to cook the pork, heat a griddle pan.
Season the pork with salt and pepper, then put them on a preheat griddle pan, BBQ or grill. Fry them for a couple of minutes on each side (depending on the thickness of the meat) until lightly charred.
Serve the bean stew with the pork placed on the top and your chosen side dishes.
