Chole (chickpeas curry)

Chole (chickpeas curry) is a great favourite in India. This dish is made with the larger and lighter coloured variety of chickpea. In India, it's often paired with fried bread called bhature. It's a very popular snack or street food and people love it all over the sub-continent.

Ingredients
  

  • 1 cup chole or chickpea soaked overnight
  • 4 Tbsp butter
  • 1 bay leaf
  • 1 inch cinnamon stick
  • ½ tsp cumin seeds
  • 1 onion finely chopped
  • 1 tsp ginger-garlic paste
  • 2 tomatoes finely chopped
  • 1 Tbsp chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ¾ tsp aamchur powder or dry-mango powder
  • salt to taste
  • ½ tsp garam masala
  • 2 cups water
  • 2 tsp coriander leaves finely chopped

Method
 

  1. In a pressure cooker, on medium flame, heat the butter. Please make sure not to burn it.
  2. To the butter, add and sauté bay leaf, cinnamon stick and cumin seeds till they turn aromatic.
  3. Add tomatoes and sauté till they start releasing the oil.
  4. Add chilli powder, turmeric, coriander powder, cumin powder, dry mango powder, garam masala and salt. Saute for a minute.
  5. Add soaked chickpea and 2 cups of water. Mix well.
  6. Pressure cook until 7-8 whistles on medium flame.
  7. Once done, garnish with coriander leaves.
  8. Serve hot with poori or roti or bhature.
